Rum-pkin Spice Latte

Rum-pkin Spice Latte

1 oz Espresso (add another shot based on preference)
1.5 oz Appleton Estate 12yr Old Rum
1 oz Homemade Pumpkin Spice Syrup 
4 oz Steamed Whole Milk
 
Combine ingredients in Irish Coffee glass (or coffee mug) and stir. Top with whipped cream, sprinkle a bit of cinnamon and orange zest and serve. 
 
Pumpkin Spice Syrup (1 liter)
1 part Water 
1 part Sugar
6 Cinnamon Sticks (broken)
2 whole nutmeg (broken)
4 x 1 inch pieces Ginger (crushed)
3 teaspoons Cloves (whole)
3 teaspoons Pimento/Allspice (whole)
Combine sugar and water in a pot. Stir until sugar is dissolved and bring to a boil. Add remaining ingredients and continue to stir. Boil until syrup is at your preferred viscosity. Remove from heat, cover pot and leave for at least 1 hour.
